She's really quite resistant to this whole plan. What does she have to be so wary about? How can you not trust a vampire with your own blood? It's not as if they drink, or are a notoriously untrustworthy lot (ignoring Darkmoon's naturally untrustworthy demeanor, which only makes that worse).
