She can, in fact, turn into a cat. That's in her original novel (and not just the original novels Carmilla writes in her free time). She turned into cats to sneak into the bedrooms of her victims (young, nubile women) so that she can feed on them.
Although I think it was implied (or maybe even stated) that the cats were larger, like jungle cats in size. Certainly the Hammer adaptation of Carmilla (the Vampire Lovers) made the cat out to be much larger (in the fleeting glimpses of it we saw).
However, I like the Chrono Trigger house cats, so this is the version we're going to go with.
