It was established in Aria of Sorrow that when Dracula dies, his castle doesn't just fall apart -- the very essence of it departs back to the Chaos Realm to await the next time Dracula comes back from the dead.
Honestly, it's kind of a stupid detail -- especially since most gamers were willing to accept that Dracula just magically made a castle every time he needed it -- but since it's in the games, I can use it to my own devices.
