Probably they took a barge up north and collected all the various animals they could that would do well in the arenas. Polar bears, rabid puffins... uhm... other, northernly animals.
Then, likely, they have small ecosystems in the basement for the animals to live in. If you want them in proper fighting shape, you have to give them properly suited regions to spend their days. Logical, of course.
